Traditionally, Koikuchi Shoyu is made from fermented wheat and soybeans. Equal parts of soybeans and wheat are usually used. The salt content in traditional Koikuchi soy sauces is around 16-19%. It is usually made solely from soya beans, although in some traditions a small amount of wheat is added. Tamari is made using a unique method that differs from other types of shoyu. Instead of a loose mixture of soya beans and wheat used for fermentation with koji in other types of shoyu, only soya beans are used to make tamari. The beans are roughly mashed after steaming and formed into small balls called mamekoji or misodama.
