Ichijū-issai (一汁一菜) literally translates to "one soup, one side-dish" and is a
manifestation of minimalism in the form of a simple meal consisting of rice, soup and one side-dish. Food in Japan has always had not only the function of satiating one's hunger, but also that of reconciling the mind with one's surroundings. Cooking is an activity one can engage in at home and by oneself. It can become a form of meditation, healing and a practice for mindfulness.
In this class we will prepare a meal together, exploring and explaining this process also from the viewpoint of Chinese philosophy and macrobiotic cuisine. We use fresh and locally produced fermented ingredients from Mimi Ferments. The menu is vegan and glutenfree.
 
This time we have a special guest Hitomi Higashi.
She is a macrobiotic cooking instructor, fashion model and mom of 6 children. Hitomi has been teaching macrobiotics for 14 years and published several lifestyle books and macrobiotic/vegan recipe book in Japan. She is based in Berlin since 2015.

Since we are preparing the workshop ahead of time we need to know the exact number of participants well in advance. We are therefore only able to accept cancelations up to 10 days before the workshop. If you happen to be unable to attend you can transfer your space to a friend.

Koji is scheduled about a week in advance, so cancellations are not possible later than 10 days before the workshop. You are welcome to have someone you suggest attend the workshop.
