naturally fermented, raw, vegan, handmade in Berlin Our SOFI Bread Miso is a dark miso with a strong malty taste and caramel aroma, rounded off by a slight acidity from the sourdough. For this creation we use sourdough bread from the popular SOFI bakery in Berlin. The bread, which is made with great dedication and by hand and is no longer available for sale, is thus used in a sustainable way. How to useThe SOFI Bread Miso can be used in a similar way to other savory miso pastes. Due to its caramel-like notes, we particularly recommend combining it with butter, either by making miso butter or by spreading the miso on a buttered bread. It is also suitable as a salad dressing in combination with olive oil. If you want to give soups and stews a malty note, simply add some of the Bread Miso. You can also use it when making bread dumplings. Season croutons with Bread Miso before frying them in a pan with butter. The Bread Miso also makes a delicious marinade for game and roasts. As with all of our products, there are no limits to your creativity when it comes to using SOFI Bread Miso. Experiment, discover new flavor combinations and find unconventional applications that expand your culinary horizons. BackgroundThe SOFI bakery is the result of the collaboration between Slow and the Danish chef and restaurateur Frederik Bille Brahe. It is committed to recovering the true flavors of old grain varieties. It relies on traditional baking craftsmanship without major interventions.
