About us

Mimi Ferments was founded in Berlin in 2017 by Markus Shimizu. In his shop and fermentation workshop in Berlin’s Wedding district, he and his team produce miso, soya sauce, mirin and other selected products that are highly regarded by numerous chefs. Markus Shimizu also regularly runs workshops to teach participants about the various aspects of fermentation. His partner, Reiko Kanazawa, organises, designs and curates art, dinners and performances.

All our products are handmade and crafted by us in Berlin. The ingredients are particularly important to us, and we place great emphasis on high quality. That is why we use only certified organic ingredients and, wherever possible, regionally sourced raw materials directly from farmers. Our guiding principle is to produce natural, healthy and tasty products. That is why we use no additives, but instead ferment naturally, taking our time. Some of our products even mature for several years! None of our fermented products are pasteurised, so they are all full of live cultures and very healthy.
