Our organic Soba Shiro Tamari, a white tamari, is made from buckwheat (soba in Japanese) and is characterized by its fine spicy notes and light floral to earthy-mushroom aromas. After a natural maturation of ten months in barriques, our buckwheat tamari has a radiant yellow-gold color and is gluten-free thanks to the buckwheat.

How to use

Its fine note and light yellow color make our buckwheat tamari the perfect seasoning for light dishes. With Soba Shiro Tamari you can refine light vegetables such as cauliflower, asparagus or salad without changing the natural color of the ingredients or masking their own flavor. Buckwheat tamari is also a suitable accompaniment to white fish and meat (dishes) because it does not overpower their flavor. With Soba Shiro Tamari you can even enrich vanilla ice cream with notes of caramel.

Background

Tamari originates from the Tokai region and was developed in Aichi, Mie and Gifu prefectures. It is usually made solely from soya beans, although in some traditions a small amount of wheat is added. Tamari is made using a unique method that differs from other types of shoyu. Instead of a loose mixture of soya beans and wheat used for fermentation with koji in other types of shoyu, only soya beans are used to make tamari. The beans are roughly mashed after steaming and formed into small balls called mamekoji or misodama. These balls are then inoculated with koji spores and ferment for about 3-4 days.

Another characteristic feature of tamari production is covering the very solid mash with stones. White tamari stands out clearly from classic, hearty soy sauces. Unlike the more commonly known dark tamari and other soy sauces that are brewed from soya beans, water and salt, white tamari consists exclusively of wheat, water and salt. Its maturation time is significantly shortened. This gives it its light color and mild flavor.
