All of our products are handmade and are handcrafted by us in Berlin. The ingredients are particularly important to us and we attach great importance to high quality. Therefore, we only use organically certified ingredients and, where possible, regionally produced raw materials directly from the farmer. Our principle is to produce natural, healthy and tasty products. Therefore, we do not use any additives, but ferment naturally and over a long period of time. Some of our products even mature for several years! None of our ferments are pasteurized, so they are all raw and very healthy.
Mimi ferments was founded in Berlin in 2017 by Markus Shimizu. In his shop and fermentation workshop in Berlin-Wedding, he and his team produce miso, soy sauce, mirin and other selected products that are appreciated by numerous chefs. Markus Shimizu also regularly teaches the various aspects of fermentation in workshops and, together with his partner Reiko Kanazawa, organizes events that combine food, art and social aspects.
