Our organic soba shiro shoyu, a white soya sauce, is made from a combination of local buckwheat and white lupins. The amber-coloured soy sauce takes on a slightly smoky flavour during its one-year maturation in peaty laphroaig barrels. In terms of flavour, it gives the impression of katsuobushi dashi, the Japanese broth made from dried and smoked bonito. However, unlike this, our buckwheat tamari is vegan and gluten-free compared to standard shiro shoyu.

How to use

Soba Shiro Shoyu has a light color and - like all our soy sauces - a lower salt content compared to conventional soy sauces. These properties make it the right choice for refining light dishes and ingredients in a subtle and elegant way. Our amber-colored soy sauce highlights the natural taste of dishes while ensuring a balanced harmony of flavors. That's why you can use organic Soba Shiro Shoyu for Kaiseki dishes, for example.

It adds a mild refinement to ingredients such as asparagus, cauliflower and clear soups without discoloring or darkening them - unlike the Koikuchi Shoyu most commonly used in Japan. The white soy sauce also goes well with rice cooked with beans.

Background

Our Shiro Shoyu are made using tried and tested traditional methods, but we use buckwheat instead of wheat for our Soba Shiro Shoyu. And we replace the soya beans with white lupins from Mecklenburg. Similarly, we use millet instead of wheat for our other Shiro Shoyu, the Kibi Shiro Shoyu.

Lupins are an excellent source of plant-based protein, which is crucial for building and regenerating tissues in the body, including muscles, skin and hair. They are also rich in fiber, which can aid digestion and support gut health. In addition, they contain a variety of nutrients such as iron, magnesium, calcium, potassium and vitamin B, which are important for various functions in the body, such as energy metabolism, blood formation and bone health.

The seeds of gluten-free buckwheat are rich in essential nutrients such as protein, fiber, B vitamins, and minerals such as magnesium, manganese, and phosphorus. Eating buckwheat can have a positive effect on blood sugar levels as it has a low glycemic index. Additionally, the fiber, flavonoids, and antioxidants in buckwheat can promote heart health by helping to lower cholesterol and support overall cardiovascular health.
