On the first full moon of the new year, we presents our mini-brewed doburoku and miso caramel in a large installation.
Doburoku is an ancient, unfiltered sake made by fermenting koji mold, rice, and water. In Japan, the tradition of sharing sake during the New Year and on special occasions has endured for centuries. It is believed to allow the spirits of the gods to blend with people, fostering unity, renewal, and connection.
Reiko Kanazawa serves handmade doburoku to attendees while presenting a landscape installation of miso caramel, which visitors are invited to eat.
