Our Ama Miso, an organic rice miso, captivates with its sweet taste and balanced umami, accompanied by elegant, hearty aromas. During the 12-month maturation process in red wine barrels, subtle malt notes unfold with a hint of dried fruit.

Our Ama Miso is characterised by a harmonious balance of sweet and savoury notes. This balance makes it ideal for a wide variety of dishes. Ama Miso can be used as a marinade or dip for grilled pork, fried aubergine or other vegetables. Of course, it is also excellent as a base for miso and other soups.

If you prefer a milder miso, we recommend our Shiro Miso. If, on the other hand, you would like a stronger paste than Ama Miso, try our Genmai Miso.

Created 300 years ago in Tokyo during the Edo period, Ama Miso enjoyed great popularity at that time as the preferred miso paste. Due to a shorter fermentation period and a higher rice content, it developed a sweet taste. To ensure that our Ama Miso develops both a distinct sweetness and heartiness with subtle notes of dried fruit, we ferment it with a particularly high proportion of koji rice and for a longer period than usual.

Our Ama Miso has a best-before date of 12 months from bottling, but it usually keeps for much longer. Over time, it may become darker and develop a more intense flavour, especially when stored at room temperature. To best preserve its original colour and mild aroma, we recommend storing it in the refrigerator.
