Our SOFI Bread Miso is a dark miso with a strong malty taste and caramel aroma, rounded off by a slight acidity from the sourdough. For this creation, we use sourdough bread from the popular SOFI bakery in Berlin. The bread, which is made with great dedication and craftsmanship and is no longer available for sale, is thus utilised in a sustainable way.
Verwendung
SOFI Bread Miso can be used in a similar way to other savoury miso pastes. Due to its caramel-like notes, we particularly recommend combining it with butter, either by making miso butter or by spreading the miso on buttered bread. It is also suitable for use with olive oil as a salad dressing. If you want to add a malty note to soups and stews, simply add some of the bread miso. You can also use it when making bread dumplings. Season croutons with bread miso before frying them in butter in a pan. Bread miso also makes a delicious marinade for game and roasts.
As with all our products, there are no limits to your creativity when it comes to using SOFI bread miso. Experiment, discover new flavour combinations and find unconventional uses that will broaden your culinary horizons.
Hintergrund
The SOFI bakery is the result of a collaboration between Slow and Danish chef and restaurateur Frederik Bille Brahe. It is dedicated to reviving the true flavours of ancient grain varieties. To achieve this, it relies on traditional baking techniques without major interventions. The grain base comes from carefully selected small organic farms in Northern Europe. This partnership combines quality, sustainability and a passion for authentic, natural flavour.

Haltbarkeit
Our bread miso has a best-before date of 12 months from the date of bottling, but it usually keeps for much longer. Over time, it may become darker in colour and develop a more intense flavour. Gonen miso is stored at room temperature.
