
shira-ae with koji tamari
Shira-ae originates from Shojin cuisine and is a traditional Japanese dish made with vegetables and tofu. In this recipe, the tofu is marinated, which makes seasoning surprisingly easy and creates a dish with a rich, almost cheese-like flavour.
Ingredients for 4 people
- 200 g firm tofu
- 100 g shiitake mushrooms
- 100 g spinach
- 100 g carrots
- 2 tbsp koji tamari
- 2 tbsp sesame seeds
Preparation
1. Marinate the tofu in koji tamari. Leave to stand in the refrigerator for two days.
2. Blanch the vegetables briefly and drain well.
3. Roast the sesame seeds and then crush them in a mortar.
4. Pass the tofu through a sieve, crush it in a mortar until creamy and mix with the ground sesame seeds.
5. Finally, mix in the vegetables – done! Season to taste and add a little Koji Tamari if necessary.
