Mimi Ferments Ponzu is a hearty soy sauce that we make with our Einkorn Koikuchi Shoyu, which has been fermented for three years, and refined with organic bergamot, grapefruit and lemon juice. The citrus fruits give the Ponzu its fruity acidity.

How to use

The balanced combination of savory soy sauce and fruity acidity of the ponzu gives dishes a special flavor. It goes well with grilled shrimp, scallops and vegetables, but also with a juicy steak. You can also use it perfectly for gyoza dips, salad dressings and as a marinade for raw fish.
