The production of mimi Koji Cha is a complex process in which the Koji rice is fermented, dried and lightly roasted for 44 hours. Through the fermentation, some of the starch in the rice is converted into various types of sugar, which, when gently roasted by hand, produce a pleasant caramel and vanilla taste. Koji Cha consists only of fermented and roasted rice and is therefore free of theine and caffeine. How to useKoji Cha can be enjoyed warm or cold. For one cup you only need a tablespoon of the mixture, which can be brewed several times. You can then mix the grounds into your yoghurt or smoothie and consume it completely.
