An absolute rarity Made from the bone and trimmings of Jamón ibérico Bellota. The Iberian pigs were carefully selected in the hills of Spain's Sierra de la Demanda, where they roamed freely and fed on acorns and grass. The producer, Cas Alba, focuses on traditional production methods to ensure the highest quality. After 36 to 48 months of maturation, the ham develops its full aroma with sweet, fruity and nutty notes – exactly what this culinary tradition is famous for.
Before packaging, the jamón was deboned, creating an incredibly aromatic by-product that is far too good to go to waste. We obtained these trimmings and bones from the delicatessen Carnivale and used them for this garum. In combination with our einkorn soy koji and spring water, it was allowed to mature for three years in red wine barrels, lovingly tended and regularly stirred by hand.
The result is a flavourfulgarum that initially spreads the umami taste of dark soy sauce and leaves a very long-lasting finish of jamón notes. Absolutely unique!
