Fresh organic Kome Koji is white rice that has been fermented with Koji Kin, a noble Japanese mould called Aspergillus oryzae. This process takes over two days. Afterwards, the rice is completely covered in koji fungus and has a slightly sweet, mushroomy-nutty flavour and aroma.
Verwendung
Fresh kome koji is an indispensable raw material for the preparation of classic Japanese fermentation products such as miso, sake, shio koji and amazake. It can also be roasted and then enjoyed as an infusion drink.
On the back of the packaging you will find recipe suggestions for amazake, shio koji and miso.
Kome Koji is also available gently dried.

Kome Koji fresh has a best-before date of two weeks. We recommend using or freezing it as soon as possible. Always keep fresh Kome Koji refrigerated.
Important: Fresh Koji rice is produced weekly on Wednesdays. If the product is no longer in stock online, you have the option of placing a pre-order. This koji is not dried and is therefore slightly moist, which is why it has a limited shelf life.
