This workshop will be held in German.
In this workshop, we will make miso paste together in the traditional Japanese way. All participants will receive their own miso made from fresh organic koji rice and steamed organic soya beans in a preserving jar to take home and leave to mature.
The history of miso, the fermentation process and the health benefits of traditionally produced soya bean paste are expertly explained. You can also try dozens of different organic miso variations, from traditionally produced soya bean miso (from young to old) to experimental vegetable miso.
Markus Shimizu, the owner of mimi ferments, will lead this course and share his many years of experience with you. He will also give you tips and tricks for the production. You will also receive a handout to read.
A warm Japanese miso soup as well as small miso and koji appetisers will be served. Drinks will also be provided.

What is miso?
Miso is a fermented, nutritious soya bean paste that has always been of great importance in Japanese culture and cuisine. This ferment, which is made from soya beans, rice or grain, has given rise to a wide variety of local and family recipes and uses in Japan.This results in many different flavours and colours of miso pastes. What they all have in common, however, is the use of the koji mushroom as a starter culture and the general method of making this ferment.

As we prepare food and ferments, it is important for us to know how many participants will be attending the workshops.The koji is scheduled about a week before the workshop, so it is no longer possible to cancel 10 days before the workshop.
However, a person suggested by you can take part in the workshop. All further information on cancellations can be found in the terms and conditions.
