This workshop will be held in German.
In this workshop, we will make miso paste together using traditional Japanese methods. All participants will receive their own miso, made from fresh organic rice koji and steamed organic soybeans, in a preserving jar to take home and leave to mature.
The history of miso, the fermentation process and the health benefits of traditionally made soybean paste will be explained by an expert. You will also be able to try dozens of different organic miso variations, from traditionally made soybean miso (from young to old) to experimental vegetable misos.
Markus Shimizu, the owner of mimi ferments, will lead this course and share his many years of experience with you. He will also give you tips and tricks for making miso. In addition, you will receive a handout to read through.
Warm Japanese miso soup and small miso and koji snacks will be served for tasting. Drinks will also be provided.

What is miso?
Miso is a fermented, nutritious soybean paste that has always been of great importance in Japanese culture and cuisine. This ferment, made from soybeans, rice or grains, has given rise to a wide variety of local and family recipes and uses in Japan. This results in many different flavours and colours of miso pastes. However, what they all have in common is the use of koji fungus as a starter culture and the general method of production of this ferment.

As we prepare food and ferments, it is important for us to know how many participants will be attending the workshops. The koji is prepared about a week before the workshop, so it is no longer possible to cancel 10 days before the workshop. However, you are welcome to suggest someone else to take your place at the workshop. You can find all further information on cancellations in the terms and conditions.
If the workshops are already sold out, please send us an email if you would like to be put on the waiting list. As soon as a place becomes available, everyone on the waiting list will be notified at the same time. The first person to respond will be given the place.
