The SOFI Bread Tamari is a dark tamari sauce with an intense malt flavor and notes of bread crust, accompanied by a subtle residual sweetness that clearly shows its origins in sourdough bread. For this unique creation, we use the sourdough bread from the popular SOFI bakery in Berlin. The bread, which is made with great dedication and by hand and is no longer available for sale, is thus used in a sustainable way. This tamari sauce is naturally fermented and matures for six months in a stoneware pot.

How to use

Our Bread Tamari is a versatile seasoning that can be used in the kitchen in a variety of ways. Simply add a small amount of Bread Tamari to dishes to intensify their flavor and give them a delicious, malty umami note. In addition to enjoying it on its own, you can use it to flavor sauces. Bread Tamari is suitable as a glaze or marinade for red meat and game, complemented by a little black pepper. Its intense flavor goes well with raw, fatty fish and rice. Therefore, you can also use the dark Tamari as a dip for sushi or sashimi.

Background

The SOFI bakery is the result of the collaboration between Slow and the Danish chef and restaurateur Frederik Bille Brahe. It is committed to recovering the true flavors of old grain varieties. It relies on traditional baking craftsmanship without major interventions. The grain base comes from carefully selected small organic farms in Northern Europe. This partnership combines quality, sustainability and a passion for real, natural taste. Since the bakery does not have organic certification, this tamari is not officially classified as an organic product.
