At the start of the New Year, we will prepare ”doburoku” using the very first batch of koji of this year produced at mimi and present it in a captivating performance.
“Doburoku” is an ancient, unrefined form of sake, made through the fermentation of koji mold, rice, and water. In Japan, it is a longstanding tradition to enjoy sake during the New Year and other special occasions, as it is believed to invite the spirits of the gods to mingle with those of humans, fostering a sense of unity and renewal.
Reiko Kanazawa will create an installation and serve the homemade doburoku to the audience alongside a live singing performance. This immersive experience will celebrate the timeless connection between tradition, spirit, and creativity.
