Tempeh

Tempeh is a traditional dish from Indonesia that uses a mold called Rhizopus oligosporus to ferment soybeans. The fungus' white mycelium binds the soybeans together, so tempeh is often sold in the form of bricks. Fermentation makes the nutrients in the soybean more available and creates vitamins and enzymes.
