SOFI Bread Tamari is a dark tamari sauce with an intense malt flavour and notes of bread crust, accompanied by a subtle residual sweetness that clearly reveals its origins in sourdough bread. For this unique creation, we use sourdough bread from the popular SOFI bakery in Berlin. The bread, which is made with great dedication and craftsmanship and is no longer available for sale, is thus utilised in a sustainable way. This tamari sauce is naturally fermented and matures for six months in a stoneware pot.
Verwendung
Our bread tamari is a versatile seasoning that can be used in a variety of ways in the kitchen. Simply add a small amount of bread tamari to dishes to intensify their flavour and give them a delicious, malty umami note. In addition to enjoying it on its own, you can use it to season sauces. Bread Tamari is ideal as a glaze or marinade for red meat and game, complemented by a little black pepper. Its intense flavour goes well with raw, fatty fish and rice. You can therefore also use dark Tamari as a dip for sushi or sashimi.

Hintergrund
The SOFI bakery is the result of a collaboration between Slow and Danish chef and restaurateur Frederik Bille Brahe. It is dedicated to reviving the true flavours of ancient grain varieties. To do so, it relies on traditional baking techniques without major interventions. The grain base comes from carefully selected small organic farms in Northern Europe. This partnership combines quality, sustainability and a passion for genuine, natural flavour. As the bakery does not have organic certification, this tamari is not officially classified as an organic product.

Haltbarkeit
Our Brot Tamari has a best-before date of six months from bottling, but it usually keeps for much longer. Warm storage temperatures can cause the sauce to darken and change its taste. We therefore recommend storing Brot Tamari in the refrigerator to preserve its quality as much as possible.
