Matured for 3 years in barriques, raw, gluten-free, handmade in Berlin Our pike garum is a fish sauce made from what is likely Germany's most popular angler's fish, along with local buckwheat and lupins. We got the pike as cuts from the two-star restaurant facil in Berlin. This idea was initiated by head chef Joachim Gerner . At the beginning, the garum is reminiscent of a combination of shrimp and parmesan, while in the finish it reveals subtle nuances of stockfish and is balanced by a fine acidity. The pike gives our garum its delicate, mild, spicy aroma, which is complemented by the nutty taste of the buckwheat. We only get 70L of garum out of a full 225L barrique, that's how concentrated this sauce is. Every drop of our pike garum fills the palate with a lively flavor and long-lasting umami. how to useThe Pike garum develops an intense flavor even in very small quantities. A few drops are enough to give your risotto, rice dishes, pasta dishes and couscous a highlight. The Pike garum is a perfect addition to clear soups and fish ramen to enhance these dishes with umami notes and intensify their flavors.
