What can you expect from miso workshop

In this miso workshop, we’ll make miso paste together using traditional Japanese methods.
You’ll learn about the history of miso, the fermentation process and the health benefits of traditionally made soybean paste. You’ll also get to taste dozens of different organic miso varieties, from traditionally made soybean miso (ranging from young to aged) to experimental vegetable misos.
Markus Shimizu, founder of mimi ferments, will lead the workshop and share his many years of experience. He’ll also provide practical tips and tricks for making miso at home. You’ll receive a handout to take home for future reference.
During the workshop, we’ll serve warm Japanese miso soup along with small bites featuring miso and koji. Drinks will also be provided.

What will you take home from the miso workshop

You’ll take home your own jar of freshly made miso, prepared with fresh organic rice koji and steamed organic soybeans. Back home, you can let it mature and develop its flavour over time.

What is Miso?

Miso, a nutritious fermented soybean paste, has long played an important role in Japanese culture and cuisine. Made from soybeans, rice, or other grains, this traditional ferment has given rise to a great variety of regional and family recipes, as well as different culinary uses throughout Japan. This diversity results in miso pastes with a wide range of flavors and colors. What they all have in common, however, is the use of koji as a starter culture and a shared basic method of fermentation.
