tofu with sashikomi shoyu

Tofu serviert mit saishikomi shoyu zum beträufeln auf einem rustikalen Holzbrett.

Spelt Saishikomi Shoyu is a rich, full-bodied soy sauce with deep umami and great flavor complexity. It is best suited for unheated applications such as "dipping and drizzling" – for sashimi, steak, or hiyayakko (cold tofu) – where its mild, multi-layered flavor can fully unfold.


Hiyayakko Cold Tofu 

Ingredients for 4 servings

  • 200g silken tofu

  • one spring onion

  • some grated ginger

Preparation

  1. Briefly dip the tofu in boiling water. 
  2. Add spring onions and ginger to taste, and just before serving, pour Spelt Saishikomi Shoyu over it.
