What makes our yuzu chili koji special

Naturally fermented, unfiltered, live, gluten-free, vegan, handmade in Berlin

Organic Yuzu Chili Koji is a spicy paste that combines the intense and unique aroma of yuzu with the floral heat of organic yellow Turuncu chillies. The result is a full range of floral, tart and spicy flavours. Our Yuzu Chili Paste is made with organic yuzu from France and Demeter organic Turuncu chillies grown especially for us in Schwerin.

PLEASE NOTE: This product is highly active due to ongoing fermentation, so pressure may occasionally build up inside the jar during shipping. As a result, some liquid may escape even through a tightly sealed lid. This does not affect the quality of the product or mean that it has spoiled. It is still safe to use.

How to use our yuzu chili koji

The taste of Yuzu Chili Koji is similar to that of Yuzu Kosho, a well-known Japanese seasoning paste made from yuzu, chilli and salt. In Japan, Yuzu Kosho is traditionally used to enhance stews such as nabe and oden, as well as various fish dishes. Our Yuzu Chili Koji also goes well with salad dressings, delicate vegetable dishes, grilled fish, shrimp and sashimi. You can also enjoy the paste with gyoza and natto.

The story behind our yuzu chili koji

Our organic Yuzu Chili Koji is our own take on yuzu kosho and shio koji, combining the spicy, floral and citrusy notes of yuzu kosho with the salty, enzyme-rich properties of shio koji paste. This makes our organic Yuzu Chili Koji suitable not only as a seasoning but also as a marinade, much like shio koji.
Unlike traditional yuzu kosho, which uses hot red or green chilli peppers, we use organic Turuncu Spiral chillies in our paste. These chillies ripen to a yellow colour and have a floral character reminiscent of habanero chillies, while being considerably milder. The Turuncu chilli therefore complements not only the yellow colour of the yuzu but also its floral notes.
Shio koji is made by fermenting rice inoculated with koji (also known as Aspergillus oryzae) together with water and salt. Koji, a beneficial mould, plays a crucial role in the production of many Japanese foods. Like other mould cultures used in the maturation of salami or cheese, it is suitable for human consumption. Traditionally, koji is cultivated on steamed rice, grains or legumes, a practice that has been established in China and Japan for thousands of years.
Koji has the remarkable ability to transform organic substances, producing compounds that are useful to humans. This process is driven by the enzymes present in koji. These enzymes break down starches, proteins and fats, contributing significantly to the development of flavour and aroma in fermented ingredients, particularly enhancing umami and sweetness. The resulting breakdown products are also easier for the human body to digest and are generally more digestible. Koji ferments are therefore not only flavourful but are also often valued for their nutritional qualities.

Shelf life

Our organic Yuzu Chili Koji has a best-before date of 12 months from the date of bottling.
Please note, however, that we cannot guarantee that the product will be bottled immediately before shipping. As we do not freshly bottle every product every day, the remaining shelf life upon arrival may be considerably shorter.
Nevertheless, our products generally remain enjoyable to eat well beyond the best-before date, so please do not discard them prematurely. The best-before date refers not only to edibility but also to sensory qualities such as colour, texture and flavour. Over time, our products generally develop a more intense aroma and a darker colour.
To best preserve the original colour and aroma of our Yuzu Chili Koji paste, we recommend storing it in the refrigerator. Refrigeration also prevents pressure from building up inside the jar.
