Our Shiro Miso has a shelf life of 9 monthsfrom bottling, Genmai Miso 12 months,while Soba Shiro Tamari and Einkorn Koikuchi Shoyu each have a best-before date of 7 months.Due to its alcohol content of over 10 % by volume, our Hon-Mirin does not have a best-before date; it has a practically unlimited shelf life and may develop a darker color and a more intense aroma over time.Please note, however, that we cannot guarantee that the product will be bottled immediately before shipping. Since we do not bottle every product fresh every day, the remaining shelf life upon receipt may be significantly shorter.Nevertheless, our products are generally edible well beyond the specified date. Please do not dispose of them prematurely.
The best-before date refers not only to edibility but also to sensory properties such as color, texture, or taste. Our products usually become somewhat more intense in aroma and darker in color over time. We recommend storage in the refrigerator. Cooling also prevents pressure from building up in the glass.
