ilili is a small but exquisite blend of smoked and dried jalapeños, limes, miso and amazake. It creates an incredible explosion of flavours in the mouth, combining savoury, sweet, tart and ethereal notes with a hint of heat and smoke. Be careful, it's instantly addictive!

ilili transports you to Central America, Southeast Asia, and definitely on an exotic culinary journey. The inspiration came from Kanzuri, a time-honoured chilli paste from Japan that also combines chillies and citrus fruits. The name ilili was created by combining chili and lime and then omitting the first and last two letters. Chililime > Ch | ilili | me > ilili.

We spared no effort in making the paste. We smoked and dried the organic jalapeños, grown especially for us by a Demeter farmer in Schwerin, in the Mexican style and processed them into chipotle. We then pulverised them for use in the paste. We carefully peeled the organic limes from Corsica by hand, meticulously removed the white pith, chopped the peel and juiced the fruit. We added our own organic ama miso and organic amazake, as well as some rice koji and sun-dried, hand-harvested sea salt.
