Our organic Koji Cha is a pleasant infusion drink with soft rice and caramel notes. The production of mimi Koji Cha is a complex process in which the Koji rice is fermented, dried and lightly roasted over 44 hours. During fermentation, some of the starch in the rice is converted into various types of sugar, which produce a pleasant caramel and vanilla flavour when gently roasted by hand. Koji Cha consists only of fermented and roasted rice and is therefore free of theine and caffeine.
Koji Cha can be enjoyed hot or cold. For one cup, you only need one tablespoon of the mixture, which can be infused several times. You can then mix the grounds into your yoghurt or smoothie and consume them completely.
Our Koji Cha is also available here, refined with bergamot and lemon peel as well as Royal Al-Hojari incense.

Koji Cha has a minimum shelf life of six months from the date of bottling. Store in a cool, dry place, just like tea.
