Pastéis de Bacalhau (fluffy cod croquettes) and Arroz de Tomate (tomato rice) are classic dishes of Portuguese cuisine. Use our product instead of salt to season them, enhancing their flavor and experiencing an even richer, authentic taste of Portugal.


Bolinhos de Bacalhau

Ingredients for 4 people

  • 250 g unsalted cod, finely chopped

  • 250 g cooked, peeled, and mashed potatoes

  • 1 large onion, finely chopped

  • 5 cloves garlic, finely chopped

  • 2–3 eggs, beaten

  • 50 g wheat flour

  • 50 g fresh parsley, finely chopped

  • 500 ml virgin oil (for frying)

  • 100 g Shiro Miso


Preparation

  1. Place all ingredients in a large bowl and mix well until a homogeneous mixture is formed.
  2. Form the mixture into small balls or oval portions.
  3. Heat oil to 180 °C.
  4. Fry the cod balls until golden brown. Drain on paper towels and serve hot.


Arroz de Tomate

Ingredients for 4 people

 

Preparation

  1. Sauté the onion over high heat in a little olive oil until golden brown.
  2. Add the garlic and sauté for 1 minute.
  3. Add tomato paste, Ama Mugi Miso, and the chopped tomatoes.
  4. Sauté for a few minutes until the mixture lightly sticks to the bottom of the pot.
  5. Add the rice and stir well to coat it with the tomato mixture.
  6. Deglaze with white wine and let the alcohol evaporate.
  7. Add 100 ml water (or broth) per 100 g rice. The final result should be very moist – almost like a risotto.
  8. Once the rice is cooked, season with Langostino garum or Smoky Fish Sauce and Hon Mirin.


If necessary, season with salt. Optionally, add roasted bell pepper and a splash of lemon juice.
